Ingredients
  

  • 2 chicken breasts cubed
  • 4 medium potatoes peeled and diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup green onions chopped
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions
 

  • Preheat your oven to 375°F (190°C) and grease a casserole dish.
  • In a large skillet, heat the olive oil over medium heat. Add cubed chicken and season with salt, pepper, and garlic powder. Cook for 6-8 minutes until the chicken is cooked through.
  • While the chicken is cooking, boil the diced potatoes in salted water for about 8-10 minutes, until tender. Drain.
  • In a large mixing bowl, combine the cooked chicken, boiled potatoes, sour cream, chicken broth, and Parmesan cheese. Mix until well combined.
  • Transfer the mixture to the prepared casserole dish and top with shredded cheddar cheese.
  • Cover with foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, until the cheese is bubbly and golden.
  • Garnish with chopped green onions and serve hot. Enjoy!
