Ingredients
  

  • 1 leek chopped
  • 1 carrot diced
  • 1 celery stalk chopped
  • 1 bell pepper diced
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon paprika
  • 300 g potatoes peeled and diced
  • 3 cloves garlic minced
  • Fresh dill chopped

Instructions
 

  • Chop the leek, carrot, celery, and bell pepper into small pieces.
  • Heat some oil in a large pot over medium heat.
  • Add the chopped vegetables and sauté until softened.
  • Peel and dice the potatoes, then add them to the pot.
  • Pour in enough water or broth to cover the vegetables.
  • Season with salt, black pepper, and paprika.
  • Bring to a boil, then reduce the heat and let simmer until the potatoes are tender.
  • Add minced garlic and chopped dill in the last few minutes of cooking.
  • Adjust seasoning as needed and serve hot.
