Cream Cheese Cake

- 8 oz cream cheese softened
- 1/2 cup vegetable oil
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup powdered sugar for glaze, optional
- 1-2 tablespoons milk or cream for glaze, optional
Preheat the oven to 350°F (175°C) and grease and flour a 9-inch springform pan.
In a large bowl, beat the softened cream cheese until smooth. Gradually add the sugar and keep beating until it’s creamy.
Beat in the eggs one at a time. Then stir in the vanilla extract.
In another bowl, whisk together the flour, baking powder, and salt.
Gradually add this dry mixture to the cream cheese mixture. Mix gently until just combined.
Pour the batter into the prepared springform pan. Bake for 30-35 minutes, or until a skewer inserted in the center comes out clean.
Let the cake cool completely in the pan on a wire rack.
For the optional glaze, whisk together the powdered sugar and milk or cream until smooth. Drizzle it over the cooled cake.
You can also add nuts, chocolate chips, or berries to make it even more delicious!
