Instructions
 

  • In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and diced jalapeños, cooking for an additional 2–3 minutes until fragrant.
  • Add shrimp to the pot and cook until they turn pink, about 3–4 minutes. Remove shrimp from the pot and set aside to prevent overcooking.
  • Pour in the coconut milk and chicken or vegetable broth. Stir in ground cumin, smoked paprika, salt, and pepper.
  • Bring the soup to a gentle simmer and let it cook for about 10 minutes to allow the flavors to meld together.
  • Return the shrimp to the pot for the final 2 minutes of cooking.
  • Ladle the soup into bowls. Garnish with fresh cilantro and serve with lime wedges for an extra burst of flavor.
