- 1 pound large shrimp peeled and deveined
- 2 tablespoons olive oil

- 2 cups fresh spinach roughly chopped

Heat olive oil in a large skillet over medium heat. Season the shrimp with salt and black pepper, then cook for 1–2 minutes per side until pink and opaque. Remove and set aside.
