Double Chocolate Banana Bread

Ingredients
  

  • 1 1/2 cups ripe bananas mashed
  • 1/2 cup melted unsalted butter
  • 1 large egg at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup Greek yogurt at room temperature
  • 1 1/2 cups all-purpose flour
  • 1/2 cup Dutch-process cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 cup chocolate chips plus extra for topping

Instructions
 

  • Preheat your oven to 180°C (350°F). Line a loaf pan with parchment paper for easy removal.
  • In a large mixing bowl, mash the ripe bananas until smooth.
  • Add the melted butter, egg, vanilla extract, granulated sugar, brown sugar, and Greek yogurt to the mashed bananas. Whisk until well combined.
  • Sift in the flour, cocoa powder, baking soda, and salt. Gently mix until just combined.
  • Fold in the chocolate chips, making sure they are evenly distributed.
  • Pour the batter into the prepared loaf pan. Sprinkle additional chocolate chips on top for an extra treat.
  • Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for at least 20 minutes before transferring it to a wire rack to cool completely.
