Homemade Peppermint Patties

- 3 cups powdered sugar
- 1/4 cup unsalted butter softened
- 3 tablespoons heavy cream
- 1 teaspoon peppermint extract
- 1/4 teaspoon vanilla extract
- 10 oz semi-sweet or dark chocolate finely chopped
- 1 tablespoon coconut oil or vegetable shortening
- Crushed peppermint candies optional
- White chocolate drizzle optional
Shape the patties: Roll the dough into 1-inch balls and flatten slightly into discs. Place them on a parchment-lined baking sheet. Freeze for 20-30 minutes until firm.
Melt the chocolate: In a microwave-safe bowl, melt the chocolate and coconut oil in 30-second intervals, stirring after each until smooth.
Coat the patties: Use a fork to dip each peppermint patty into the melted chocolate, letting the excess drip off. Place them back on the parchment-lined baking sheet.
