Homemade Samoas Cookies

Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups shredded coconut toasted
  • 1 cup caramel sauce
  • 1/2 cup heavy cream
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups semi-sweet chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a mixing bowl, cream together the softened butter and sugar until light and fluffy. Stir in the vanilla extract.
  • Gradually add the flour and salt, mixing until a dough forms. Roll the dough into small balls, flatten them slightly, and place them on the prepared baking sheets.
  • Bake for 10–12 minutes or until the edges are lightly golden. Let the cookies cool completely on a wire rack.
  • In a saucepan over low heat, combine caramel sauce and heavy cream. Stir until smooth, then add vanilla extract and toasted shredded coconut, mixing well.
  • Spread the caramel coconut mixture generously over each cooled cookie. Melt the chocolate chips until smooth.
  • Dip the bottoms of the cookies into the melted chocolate and place them back on the baking sheet. Drizzle remaining melted chocolate over the tops.
  • Allow the cookies to set at room temperature or chill until the chocolate hardens.
