Homemade Samoas Cookies
Homemade Samoas Cookies are a tasty delight that combines chocolate, caramel, and coconut in every bite. They are perfect for sharing with family and friends, and they bring a little taste of nostalgia from the classic Girl Scout cookies. Let’s dive into how you can make these treats at home!
- 1 cup unsalted butter softened
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 1/2 cups shredded coconut toasted
- 1 cup caramel sauce
- 1/2 cup heavy cream
- 1/2 teaspoon vanilla extract
- 1 1/2 cups semi-sweet chocolate chips
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a mixing bowl, cream together the softened butter and sugar until light and fluffy. Stir in the vanilla extract.
Gradually add the flour and salt, mixing until a dough forms. Roll the dough into small balls, flatten them slightly, and place them on the prepared baking sheets.
Bake for 10–12 minutes or until the edges are lightly golden. Let the cookies cool completely on a wire rack.
In a saucepan over low heat, combine caramel sauce and heavy cream. Stir until smooth, then add vanilla extract and toasted shredded coconut, mixing well.
Spread the caramel coconut mixture generously over each cooled cookie. Melt the chocolate chips until smooth.
Dip the bottoms of the cookies into the melted chocolate and place them back on the baking sheet. Drizzle remaining melted chocolate over the tops.
Allow the cookies to set at room temperature or chill until the chocolate hardens.
