Homemade Taco Bell Enchiritos

If you love Taco Bell’s Enchiritos, you are going to love making them at home! This recipe is simple, fun, and perfect for family meals. You can enjoy cheesy goodness wrapped in a warm tortilla, and it tastes just like the fast-food classic!

Ingredients
  

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/4 cup water
  • 6 medium flour tortillas
  • 1 can 16 ounces refried beans
  • 1/2 cup diced onions
  • 1 can 10 ounces red enchilada sauce
  • 1 cup shredded cheddar cheese
  • Optional toppings: sliced black olives sour cream, chopped cilantro

Instructions
 

  • In a skillet over medium heat, cook the ground beef until browned, breaking it apart with a spoon. Drain excess grease, then stir in the taco seasoning and water. Simmer for 5 minutes, then remove from heat.
  • Heat the refried beans in a small saucepan or microwave until soft and spreadable.
  • Lay a tortilla flat. Spread a layer of refried beans down the center. Add a scoop of seasoned beef and a sprinkle of diced onions. Roll up the tortilla like a burrito, tucking in the sides as you roll.
  • Place each rolled enchirito seam-side down in a greased 9×13-inch baking dish.
  • Pour the enchilada sauce evenly over the rolled enchiritos. Sprinkle shredded cheddar cheese generously on top.
  • Preheat your oven to 375°F (190°C). Cover the dish with foil and bake for 15 minutes. Remove the foil and bake for another 5-7 minutes, or until the cheese is fully melted and bubbly.
  • Remove from the oven and garnish with sliced black olives, sour cream, or chopped cilantro if desired. Serve warm and enjoy!
