  • 1 tablespoon lemon juice
  • 1 tablespoon light brown sugar
  • 1 and 1/2 tablespoons honey
  • 1 to 2 large garlic cloves minced
  • 3 to 4 fresh mint leaves chopped (for garnish)
  • 1 teaspoon sea salt
  • 1 teaspoon smoked paprika
  • 1/8 teaspoon white pepper

Instructions
 

  • Preheat the oven to 400°F (204°C).
  • Pat the salmon dry and cut it into two even pieces.
  • Arrange the pineapple rings on a lined baking sheet and place the salmon on top.
  • In a bowl, mix the pineapple, melted butter, sesame oil, lemon juice, honey, brown sugar, minced garlic, and salt to create the marinade.
  • Cover the salmon with the marinade and let it sit in the fridge for 15-30 minutes.
  • Bake the salmon for 40 minutes or until the internal temperature reaches 145°F (63°C).
  • Let it rest for 10 minutes before garnishing with fresh mint.
