Ingredients
  

  • 1 lb ground beef or Italian sausage
  • 1 small onion diced
  • 3 garlic cloves minced
  • 1 can 28 oz crushed tomatoes
  • 1 can 14 oz diced tomatoes
  • 4 cups beef broth
  • 2 tsp Italian seasoning
  • 1/4 tsp red pepper flakes optional
  • Salt and pepper to taste
  • 8 oz lasagna noodles broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh parsley chopped

Instructions
 

  • In a large pot, brown the ground beef or sausage over medium heat. Add the diced onion and garlic, cooking until softened.
  • Stir in crushed tomatoes, diced tomatoes, beef broth, Italian seasoning, red pepper flakes, salt, and pepper. Bring to a boil, then reduce to a simmer for 15 minutes.
  • Add the broken lasagna noodles to the pot and simmer until tender, about 10-12 minutes. Stir occasionally to prevent sticking.
  • In a small bowl, mix ricotta, mozzarella, Parmesan, and parsley until combined.
  • Ladle the soup into bowls and top each with a dollop of the cheese mixture. Let it melt slightly for that lasagna vibe.
