Lemon Butter Baked Cod

Ingredients
  

  • 2 lb cod fillet or any white fish
  • 1/4 cup butter or margarine
  • 2 tablespoons lemon juice
  • 1/4 cup all-purpose flour
  • Dash of paprika
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 350°F (175°C) to get it ready for baking.
  • Cut the cod fillets into serving-size portions for easy handling.
  • In a saucepan or microwave, melt the butter. Then stir in the lemon juice for a zesty flavor.
  • In another bowl, mix the flour, salt, and pepper together.
  • Take each piece of cod and dip it in the lemon butter mixture, making sure it’s well coated.
  • Next, roll the buttery fish in the flour mixture on all sides to give it a nice crust.
  • Place the coated fillets in an ungreased baking dish and drizzle any leftover lemon butter over them.
  • Sprinkle a dash of paprika on top for extra flavor and color.
  • Bake uncovered for 25-30 minutes or until the fish flakes easily with a fork.
  • Finally, garnish with parsley and lemon wedges for a pretty finish before serving.
