Ingredients

  • 1 cup powdered sugar for coating, optional

Instructions
 

  • Optional: Toast the chopped pecans in a dry skillet over medium heat for 3–5 minutes until fragrant. Let them cool completely.
  • In a large bowl, combine the finely chopped pecans, graham cracker crumbs, and packed brown sugar. Mix until evenly combined.
  • Add the light corn syrup, vanilla extract, and salt to the dry ingredients. Stir thoroughly until a sticky dough forms.
  • Using your hands, scoop out small portions of the mixture and roll them into 1-inch balls. If the mixture is too sticky, refrigerate it for about 15 minutes to firm up.
  • Optional: Place the powdered sugar in a shallow dish and roll each ball in the powdered sugar until fully coated.
  • Arrange the pecan pie balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to allow them to firm up.
  • Serve the pecan pie balls on a platter. Enjoy immediately or store in an airtight container in the refrigerator for up to one week.
