Perfect Christmas Chocolate Cupcakes

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1/2 cup strong brewed coffee cooled
  • 1 tsp vanilla extract
  • 1 cup unsalted butter softened (for frosting)
  • 4 cups powdered sugar
  • 2-3 tbsp heavy cream
  • 1 tsp vanilla extract for frosting
  • Green food coloring
  • Christmas sprinkles or mini chocolate stars

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  • In a bowl, sift together the flour, cocoa powder, baking soda, and salt.
  • In a separate bowl, beat the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each.
  • Add the dry ingredients to the butter mixture in three parts, alternating with buttermilk and coffee. Begin and end with the dry ingredients. Mix in the vanilla extract.
  • Divide the batter evenly among the cupcake liners. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Let the cupcakes cool completely.
  • Beat the butter until creamy for the frosting. Gradually add powdered sugar, mixing until smooth. Add heavy cream and vanilla extract, then beat until fluffy. Mix in green food coloring for a festive look.
  • Use a piping bag with a star tip to frost the cupcakes. Top with sprinkles or mini chocolate stars for holiday flair.
