Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • 1 onion sliced
  • 1 green bell pepper sliced
  • 1 red bell pepper sliced
  • 1 cup provolone cheese shredded
  • 1 cup chicken broth
  • 2 tablespoons Italian seasoning
  • Salt and pepper to taste
  • Hoagie rolls

Instructions
 

  • Place the chicken breasts in the slow cooker and season with salt, pepper, and Italian seasoning.
  • Add the sliced onion and bell peppers on top of the chicken.
  • Pour chicken broth over the top.
  • Cover and cook on low for 6-7 hours or high for 3-4 hours.
  • Once cooked, shred the chicken using two forks and mix with the vegetables.
  • Serve the mixture on hoagie rolls and top with provolone cheese.
  • Optionally, place under the broiler for a few minutes to melt the cheese before serving.
