Ingredients
  

  • 1 cup unsalted butter softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • Optional for Rolling: 1/4 cup granulated sugar

Instructions
 

  • Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  • In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, which takes about 2 to 3 minutes.
  • Add in the egg, egg yolk, and vanilla extract, mixing until everything is well combined.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt.
  • Gradually mix the dry ingredients into the wet ingredients until just combined. Don’t overmix!
  • Scoop about 1 1/2 tablespoons of dough and roll it into balls. If you want, roll each ball in granulated sugar for extra sweetness.
  • Place the dough balls 2 inches apart on the prepared baking sheets.
  • Bake for 8 to 10 minutes, or until the edges are set but the centers look slightly underbaked.
  • Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.
