Instructions
 

  • Prepare the Chicken: In a shallow bowl, whisk together the flour, garlic powder, paprika, salt, and pepper. In another bowl, pour the buttermilk. In a third bowl, place the panko breadcrumbs. Dredge each chicken breast in the flour mixture, then dip it into the buttermilk, and coat it with breadcrumbs.
  • Fry the Chicken: Heat the vegetable oil in a large skillet over medium-high heat. Fry each chicken breast for 4–5 minutes per side or until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
  • Make the Sauce: In a small saucepan, combine sweet chili sauce, soy sauce, honey, rice vinegar, and garlic. Bring to a simmer over medium heat, stirring occasionally. Let the sauce cook for about 3–4 minutes until it thickens slightly.
  • Assemble the Sandwiches: Place a piece of crispy chicken on the bottom half of each toasted bun. Drizzle the sticky sweet chili sauce generously over the chicken. Optionally, add a scoop of coleslaw for added texture and freshness. Top with fresh cilantro.
  • Serve: Close the sandwich with the top bun and serve immediately with extra sauce on the side for dipping.
