Teriyaki Chicken Casserole

- 3/4 cup low-sodium soy sauce
- 1/2 cup water
- 1/4 cup brown sugar
- 1/2 teaspoon ground ginger
- 1/2 teaspoon minced garlic
- 2 tablespoons cornstarch
- 2 tablespoons water for cornstarch mixture
- 1 pound boneless skinless chicken breasts
- 1 bag 12 ounces stir-fry vegetables (broccoli, carrots, snow peas, etc.)
- 2 cups cooked rice
- Sesame seeds for garnish
- Chopped green onions for garnish
Prepare the Teriyaki Sauce: In a medium saucepan, combine soy sauce, water, brown sugar, ground ginger, and minced garlic. Heat over medium heat until it starts to simmer. Mix cornstarch with 2 tablespoons of water, then whisk it into the sauce. Cook until it thickens, about 2 minutes. Remove from heat and set aside.
Cook the Chicken: Cook the chicken breasts in a skillet over medium heat for 6–8 minutes on each side until fully cooked. Let the chicken cool slightly, then shred it.
Combine the Ingredients: In a large bowl, mix shredded chicken, stir-fry vegetables, cooked rice, and teriyaki sauce until everything is coated evenly.
Bake the Casserole: Preheat your oven to 375°F (190°C). Transfer the mixture into a baking dish and bake for 20–25 minutes until heated through and the edges are bubbly.
Serve: Serve the casserole warm, garnished with sesame seeds and chopped green onions if you like.
