Teriyaki Chicken Casserole

Teriyaki Chicken Casserole is a delightful dish that combines tender chicken, colorful vegetables, and a savory teriyaki sauce. This recipe is easy to make and perfect for family dinners. With its comforting flavors, it’s sure to be a hit at your table!

Ingredients
  

  • 3/4 cup low-sodium soy sauce
  • 1/2 cup water
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon minced garlic
  • 2 tablespoons cornstarch
  • 2 tablespoons water for cornstarch mixture
  • 1 pound boneless skinless chicken breasts
  • 1 bag 12 ounces stir-fry vegetables (broccoli, carrots, snow peas, etc.)
  • 2 cups cooked rice
  • Sesame seeds for garnish
  • Chopped green onions for garnish

Instructions
 

  • Prepare the Teriyaki Sauce: In a medium saucepan, combine soy sauce, water, brown sugar, ground ginger, and minced garlic. Heat over medium heat until it starts to simmer. Mix cornstarch with 2 tablespoons of water, then whisk it into the sauce. Cook until it thickens, about 2 minutes. Remove from heat and set aside.
  • Cook the Chicken: Cook the chicken breasts in a skillet over medium heat for 6–8 minutes on each side until fully cooked. Let the chicken cool slightly, then shred it.
  • Combine the Ingredients: In a large bowl, mix shredded chicken, stir-fry vegetables, cooked rice, and teriyaki sauce until everything is coated evenly.
  • Bake the Casserole: Preheat your oven to 375°F (190°C). Transfer the mixture into a baking dish and bake for 20–25 minutes until heated through and the edges are bubbly.
  • Serve: Serve the casserole warm, garnished with sesame seeds and chopped green onions if you like.
